Ingredients
450 Grams 450 chicken breast, sliced
1 1 clove garlic, grated
2 tbs 2 olive oil for frying
56 grams 56 butter for frying
145 grams 145 button mushrooms halved
4 4 spring onions, chopped
1 tsp 1 cornflower
115 ml 115 dry white wine or chicken stock
2 tbs 2 tomato purée
Pinch of ground nutmeg
140 ml 140 sour cream. Or crème fraîche
Salt
Fresh black pepper
1 1 bay leaf
Directions
- Heat butter and oil in a pan.
- Cut chicken into pieces stir-fry in butter and oil for 4 minutes remove chicken and set aside.
- Add mushrooms, spring onions, and garlic, and cook until soft.
- Mix together the cornflour and wine or stock to create a smooth paste.
- Add to pan with tomato paste, nutmeg, and bay leaf.
- Bring to a boil whilst stirring add chicken and simmer for a further 15 minutes
- Turn off the heat stir in cream and add seasoning and heat without boiling.
- Remove bay leaf and serve.
