Chicken stroganoff recipe
Ingredients
- 450 grams chicken breast, sliced
- 1 clove garlic, grated
- 2 tbs of olive oil for frying
- 56 grams butter for frying
- 145 grams button mushrooms, halved
- 4 spring onions, chopped
- 1 tsp of cornflower
- 115 ml dry white wine or chicken stock
- 2 tbs tomato purée
- Pinch of ground nutmeg
- 140 ml sour cream. Or crème fraîche
- Salt
- Fresh black pepper
- 1 bay leaf
Instructions
- Heat butter and oil in a pan.
- Cut chicken into pieces stir-fry in butter and oil for 4 minutes remove chicken and set aside.
- Add mushrooms, spring onions and garlic and cook until soft.
- Mix together cornflour and wine or stock to create a smooth paste.
- Add to pan with tomato paste, nutmeg and bay leaf.
- Bring to the boil whilst stirring add chicken and simmer for a further 15 minutes.
- Turn off heat stir in cream and add seasoning and heat without boiling.
- Remove bay leaf and serve.
