Chicken stroganoff recipe

Ingredients

  • 450 Grams 450 chicken breast, sliced

  • 1 1 clove garlic, grated

  • 2 tbs 2 olive oil for frying

  • 56 grams 56 butter for frying

  • 145 grams 145 button mushrooms halved

  • 4 4 spring onions, chopped

  • 1 tsp 1 cornflower

  • 115 ml 115 dry white wine or chicken stock

  • 2 tbs 2 tomato purée

  • Pinch of ground nutmeg

  • 140 ml 140 sour cream. Or crème fraîche

  • Salt

  • Fresh black pepper

  • 1 1 bay leaf

Directions

  • Heat butter and oil in a pan.
  • Cut chicken into pieces stir-fry in butter and oil for 4 minutes remove chicken and set aside.
  • Add mushrooms, spring onions, and garlic, and cook until soft.
  • Mix together the cornflour and wine or stock to create a smooth paste.
  • Add to pan with tomato paste, nutmeg, and bay leaf.
  • Bring to a boil whilst stirring add chicken and simmer for a further 15 minutes
  • Turn off the heat stir in cream and add seasoning and heat without boiling.
  • Remove bay leaf and serve.
