Homemade Vegetable Soup Recipe

kcalA delicious and easy homemade Vegetable soup that is perfect for any time of year as well as fall and winter.
Ingredients
1 tbsp olive oil, for frying
2 medium onions, chopped finely
3 spring onions, chopped finely
2 cloves of garlic, grated
1 tbsp tomato puree
1 leek, chopped finely
3 large potatoes, diced
3 celery sticks, chopped
1300 ml vegetable stock
320 grams of mixed frozen vegetables
Dash Salt
Fresh black pepper
1.5 teaspoons fresh mixed herbs
Directions
- Heat the oil in a deep pan
- Fry onion and garlic for five minutes to soften.
- Add the stock, leek, celery, potatoes, tomato puree, Salt, and pepper, then bring to a boil and simmer for 20 minutes to soften the vegetables.
- Add spring onions, and mixed herbs and frozen veg bring to a boil and then simmer for a further 15 minutes.
- Check the seasoning and serve immediately
