A delicious and easy homemade Vegetable soup that is perfect for any time of year as well as fall and winter.

Ingredients

  • 1 tbsp olive oil, for frying

  • 2 medium onions, chopped finely

  • 3 spring onions, chopped finely

  • 2 cloves of garlic, grated

  • 1 tbsp tomato puree

  • 1 leek, chopped finely

  • 3 large potatoes, diced

  • 3 celery sticks, chopped

  • 1300 ml vegetable stock

  • 320 grams of mixed frozen vegetables

  • Dash Salt

  • Fresh black pepper

  • 1.5 teaspoons fresh mixed herbs

Directions

  • Heat the oil in a deep pan
  • Fry onion and garlic for five minutes to soften.
  • Add the stock, leek, celery, potatoes, tomato puree, Salt, and pepper, then bring to a boil and simmer for 20 minutes to soften the vegetables.
  • Add spring onions, and mixed herbs and frozen veg bring to a boil and then simmer for a further 15 minutes.
  • Check the seasoning and serve immediately
