Homemade Carrot Soup, This is a really simple and delicious carrot soup. It is easy to make and a great way to use up those spare carrots that are too old for other things. You make this soup with basic ingredients and the result is a delicious, vibrant orange, creamy soup. There are lots of variations on carrot soup, but with this version, it has a little potato in it and this gives the carrot soup a nice thick texture.

With this carrot soup recipe, you can change the number of ingredients you need. Change the recipe to fit the number of people you want to cook for. You can do this by altering the number of people in the recipe. This will change all of the ingredients and show you what you require.

Carrot soup recipe

Ingredients

  • 40 Grams 40 butter for frying

  • 700 Grams 700 carrots, sliced

  • 1 1 large onion, chopped

  • 1 1 small potato

  • 2 2 cloves garlic, chopped

  • 1 tsp 1 cumin

  • 568 ml 568 Vegetable stock

  • 568 ml 568 fresh milk

  • Salt

  • Freshly ground black pepper

  • 2 tsp 2 Worcestershire sauce

  • 40 ml 40 fresh cream

Directions

  • Heat the butter in a pan and carrots, onion and garlic and cook for 5 minutes until softened.
  • Add the potato and cook for a further minute.
  • Next, add stock, milk and seasoning bring to a boil cover, and simmer gently for 15-20 minutes stirring regularly until vegetables are cooked.
  • Add Worcestershire sauce, cumin, and puree using a hand blender or food processor then return to pan.
  • Check to season and cook for a further 5 minutes
  • Add Fresh cream if desired for extra taste.

Notes

  • The Carrots, Onion, Potato and Garlic can be roughly chopped as you will be blending the soup.
