Ingredients
4 4 small potatoes
1 tbs 1 olive oil
3 3 cloves garlic
1 1 small onion
75 Grams 75 Rocket (Arugula)
700 ml 700 Vegetable Broth
Dash of pepper
Dash of salt
Directions
- Peel and Cube potatoes, mince the garlic and chop the onion.
- Put the potatoes in a saucepan and cover with cold water by 2 inches. Salt the water generously. Bring to a boil over medium heat and cook the potatoes until tender, approximately 10-12 minutes. Drain the water and leave it aside.
- Heat oil in the same saucepan and saute the onion and garlic for a few minutes until it’s slightly brown. Add potatoes to the saucepan and cook for 3-5 minutes then add 2 cups of the vegetable broth.
- Once it starts simmering, add the Rocket (arugula) to the pot and cook until it is slightly wilted. Season with salt and pepper. Remove the pan from the heat and let it cool for a little bit.
- Using a hand blender blend to puree the potatoes and rocket (arugula) together until smooth. Add more broth as needed to loosen up the consistency as per your liking.
Adjust seasoning. Serve and enjoy!
