Ratatouille recipe
Ratatouille recipe is a traditional French dish made from stewed vegetables, herbs and spices. It can be served as a side dish or as a main course with meat or fish. Ratatouille is known as “Le plat du pauvre” (poor man’s food) in France because it uses inexpensive ingredients, but it tastes great and can be served as a first course or entrée.
Ratatouille is an excellent way to use up all those summer vegetables that are in abundance during the growing season. You can also make ratatouille in the winter by using frozen vegetables. The good news is that it freezes well and will keep for months in your freezer if properly packaged and labeled.

Ingredients
3 tbs 3 olive oil for frying
1 1 large onion, thinly sliced
2 2 cloves garlic, grated
1 1 medium red pepper, seeded and chopped
1 1 medium yellow pepper, seeded and chopped
2 2 sticks celery, chopped
1 1 large aubergine, sliced
175 Grams 175 courgettes
400 Grams 400 tinned tomatoes
2 tbs 2 tomato puree
2 tsp 2 mixed herbs
3 tbs 3 chopped parsley
Salt
Fresh ground black pepper
Directions
- Fry onion gently in oil for 3 to 4 minutes.
- Add garlic, peppers, and celery and cook for a further 4 minutes
- Add remaining vegetables, tinned tomatoes, tomato puree, mixed herbs and parsley to the pan.
- Season with salt and pepper
- Cover and simmer gently for 50-55 minutes
- Serve hot or cold
Notes
- Cook for longer if you want the vegetables to break down more.
