Leek And Potato Soup Ingredients

Ingredients

  • 1 1 Leek

  • 820 ml 820 Vegetable Broth

  • 75 Grams 75 Lentils

  • 1 1 Large Potato

  • Dash of Salt

  • Dash of Pepper

Directions

  • Slice the leek in half lengthways and wash well to remove any dirt, cut into slices (approx 1cm). Cut the potato into small even-sized pieces. Place all the ingredients in a large saucepan
  • Bring to a boil, reduce heat and simmer gently for approx 20 mins, stirring occasionally.
  • Season with salt and pepper to taste and blend until smooth, either in a blender or in the pan with a handheld stick blender. If you want a slightly thinner soup you can add a little more water at this stage
