Leek And Potato Soup Ingredients
Ingredients
- 1 Leek
- 820 ml Vegetable Broth
- 75 grams Lentils
- 1 Large Potato
- Dash of Salt
- Dash of Pepper
Instructions
- 1. Slice the leek in half lengthways and wash well to remove any dirt, cut into slices (approx 1cm). Cut the potato into small even-sized pieces. Place all the ingredients in a large saucepan.
- 2. Bring to a boil, reduce heat and simmer gently for approx 20 mins, stirring occasionally.
- 3. Season with salt and pepper to taste and blend until smooth, either in a blender or in the pan with a handheld stick blender. If you want a slightly thinner soup you can add a little more water at this stage
