Chicken Soup Recipe
Ingredients
- 30 grams of butter or marg.
- 1 medium onion, peeled and chopped
- 1 Potato, peeled and chopped
- 900 ml chicken stock
- 1 Bay leaf
- 1 leek, trimmed and chopped
- 2 tbsp cornflower mixed with 2 tbsp cold water
- 1/2 small cauliflower, chopped
- 1 clove garlic, grated
- 200 grams chicken cooked and shredded.
- 100 ml fresh milk
- 1/4 tsp ground nutmeg
- Salt
- Fresh ground pepper
- 2 tbsp parsley
Instructions
- Heat the butter or Marg in a pan mix in the onion and Garlic and stir.
- Slowly add the Stock.
- Add the vegetables and bay leaf and simmer gently for 30 minutes until vegetables are cooked.
- Remove the bay leaf and Puree using a hand blender or food processor then return to pan.
- Stir in the milk, nutmeg, parsley, chicken and season with salt and pepper.
- Mix cornflour with 2 tbsp. cold water to smooth paste. Slowly add the corn starch, until you have the desired consistency.
- Cook stirring until soup boils and thickens.
- Check seasoning.
- Simmer for 10 minutes.
- Serve immediately with a sprig of fresh parsley.
