Chilli con Carne recipe

Ingredients

  • 1 1 onion, chopped

  • 2 2 garlic cloves, grated

  • 1 1 green pepper, chopped

  • 500 Grams 500 minced beef

  • 300 Ml 300 beef stock

  • 2 tbs 2 tomato purée

  • 1/2 tsp 1/2 oregano, dried

  • 2 tsp 2 chilli powder

  • 2 tsp 2 cumin

  • 1 1 bay leaf, (scrunch the bay leaf to release the oils)

  • 2 2 red chilli fresh, ( deseed if you want a milder chilli)

  • 400 Grams 400 red kidney beans

  • 400 Grams 400 chopped tinned tomatoes

  • 1 tsp 1 sugar

  • Salt and black pepper

  • 1 tbs 1 vegetable oil for frying

Directions

  • Heat oil and fry onions until they are softened.
  • Add meat and fry until all meat is browned and no big pieces are left.
  • Mix in peppers, chilli powder, cumin, fresh chilli and garlic and fry until softened.
  • Add the rest of the ingredients mix well cook covered for 60 minutes stirring occasionally
  • Remove the bay leaf and serve with rice or salad and tortilla chips or garlic bread.

Notes

  • Scrunch the bay leaf to release the oils
  • Deseed if you want a milder chilli
  • You can leave the Chilli con Carne with the lid on for 5-10 minutes once cooked to allow the flavours to mature.
  • Add Cream or crème fresh when serving for additional taste.
