Beef Bourguignon
This Classic Beef Bourguignon is a perfect Fall meal, with its depth of flavor and luxurious gravy. It will be a hit with all the family and is an excellent dish to serve to friends or for the Holidays.

Notes
Slowly mix the two tablespoons of corn flour with 2 tablespoons of water until you get a runny paste, you will use this to thicken the sauce partway through cooking. Make sure there are no lumps.
If beef is not tender return to the oven.
Add baby potatoes and vegetables to serve.
Ingredients
- 4 tbs olive oil
- 500 grams braising steak
- 75 grams Streaky Bacon
- 300 grams Shallot, peeled left whole
- 1 large onion, diced
- 2 cloves garlic, grated
- 550 ml red wine
- 150 ml beef stock
- 2 tbs tomato purée
- 250 grams baby button Mushrooms whole
- 3 bay leaf
- 2 sprigs thyme
- 2 tbs corn flour
- Salt
- Pepper
Instructions
- Cut the beef into cubes and season with salt and pepper.
- Heat oil in a large pan and fry beef until browned. Add to your casserole dish.
- Heat 1 tablespoon of olive oil in your pan and add bacon, shallots, onion and garlic to your pan and fry until slightly browned then add to your casserole dish.
- Add wine, beef stock, tomato puree, mushrooms, bay leaves and thyme to your casserole dish.
- Mix well and bring to a slow boil add the lid and place in the oven. 160 degrees or gas mark 3. for approximately 1h 20 mins.
- After 50 mins add the corn flour mixture to thicken the sauce.
