Ingredients
40 Grams 40 Grams butter, for frying
700 Grams 700 carrots, sliced
1 1 large onion, chopped
1 1 small potato
2 2 cloves garlic, chopped
1 tsp 1 ground coriander
568 ml 568 Vegetable stock
568 ml 568 fresh milk
Salt
Freshly ground black pepper
2 tsp 2 Worcestershire sauce
Half a bunch of fresh coriander
Directions
- Heat the butter in a pan and fry carrots, onion, and garlic for 5 minutes until softened.
- Add the potato and ground coriander and cook for a further minute.
- Next, add stock, milk, and seasoning bring to a boil cover, and simmer gently for 15-20 minutes stirring regularly until vegetables are cooked.
- Add fresh coriander, and Worcestershire sauce, and use a hand blender or food processor to puree.
- Return to the pan, check the seasoning and cook for a further 5 minutes
Notes
- The Carrots, Onion, Potato, and Garlic can be roughly chopped as you will be blending the soup.
