Carrot and coriander soup recipe

Ingredients

  • 40 Grams 40 Grams butter, for frying

  • 700 Grams 700 carrots, sliced

  • 1 1 large onion, chopped

  • 1 1 small potato

  • 2 2 cloves garlic, chopped

  • 1 tsp 1 ground coriander

  • 568 ml 568 Vegetable stock

  • 568 ml 568 fresh milk

  • Salt

  • Freshly ground black pepper

  • 2 tsp 2 Worcestershire sauce

  • Half a bunch of fresh coriander

Directions

  • Heat the butter in a pan and fry carrots, onion, and garlic for 5 minutes until softened.
  • Add the potato and ground coriander and cook for a further minute.
  • Next, add stock, milk, and seasoning bring to a boil cover, and simmer gently for 15-20 minutes stirring regularly until vegetables are cooked.
  • Add fresh coriander, and Worcestershire sauce, and use a hand blender or food processor to puree.
  • Return to the pan, check the seasoning and cook for a further 5 minutes

Notes

  • The Carrots, Onion, Potato, and Garlic can be roughly chopped as you will be blending the soup.
