Recipe Roasted Chickpea Vegan Wraps
Ingredients
- 210 grams Chickpeas
- 1/2 tbs Olive Oil
- 1/2 tbs paprika
- 1/4 tbs cayenne pepper
- 1/2 tbs pepper
- Dash of salt
- 2 large pita bread
- 4 tbs tzatziki
- 1/2 medium red onion
- 1 Small lettuce, Chopped
- 1 medium tomato
Instructions
- 1. Drain and rinse the chickpeas and pat the chickpeas dry with a paper towel. Remove any skins that may come off.
- 2. Spread chickpeas onto a greased rimmed baking sheet and roast at 400 degrees F (200 C)
- for about 20 minutes, until lightly browned but not hard.
- 3. In the meantime, Chop the lettuce leaves, slice the tomatoes and red onions then set aside.
- 4. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, red onions, and salt.
- 5. Spread some tzatziki onto one side of a pita, then sprinkle in ¼ of the chickpeas and the lettuce and tomatoes. Fold in half and enjoy!
