Ingredients
175 Grams 175 silken tofu
1 tbsp 1 vanilla extract
1 Cup 1 almond milk (or any other non-dairy milk)
1/2 tbs 1/2 vegetable oil, plus extra for frying
125 Grams 125 all-purpose flour (gluten-free if needed)
1/2 tbs 1/2 ground cardamom
2 tbs 2 coconut sugar
1/2 tbs 1/2 baking powder (gluten-free if needed)
1/2 tbs 1/2 salt
Directions
- In a mixing bowl, blend together the tofu, vanilla extract, oil and milk until a smooth and thick batter forms. Use a blender or electric mixer if needed.
- In a separate bowl, mix together all the dry ingredients, making sure there are no lumps.
- Pour the tofu mix into dry ingredients and mix well, until you have a thick batter.
- Heat a large non-stick frying pan and pour in a very small amount of oil.
- Add your pancake batter to the frying pan. Use approximately the same amount of batter per pancake. Cook for about 2 minutes on each side, until bubbles pop over most of the surface.
- If you like you can serve it with maple syrup and berries, enjoy!
