Tofu Breakfast Protein Pancakes
Ingredients
- 175g pack silken tofu
- 1 Tbsp vanilla extract
- 1 cup almond milk (or any other non-dairy milk
- 1/2 Tbsp vegetable oil, plus extra for frying
- 125 g all-purpose flour (gluten-free if needed)
- 1/2 Tbsp ground cardamom
- 2 Tbsp coconut sugar
- 1/2 Tbsp baking powder (gluten-free if needed)
- 1/2 Tbsp salt
Instructions
- 1. In a mixing bowl, blend together the tofu, vanilla extract, oil and milk until a smooth and thick batter forms. Use a blender or electric mixer if needed.
- 2. In a separate bowl, mix together all the dry ingredients, making sure there are no lumps.
- 3. Pour the tofu mix into dry ingredients and mix well, until you have a thick batter.
- 4. Heat a large non-stick frying pan and pour in a very small amount of oil.
- 5. Add your pancake batter into the frying pan. Use approximately the same amount of batter per pancake. Cook for about 2 minutes on each side, until bubbles pop over most of the surface.
- 6. If you like you can serve with maple syrup and berries, enjoy!
