Vegan Tomato Soup Recipe

Ingredients

  • 400 grams 400 tomatoes (canned)

  • 180 ml 180 soy milk

  • 1 tbs 1 olive oil

  • 2 2 cloves garlic, grated

  • 1 tbs 1 drained capers

  • Salt

  • Pepper

Directions

  • Lightly Sautee the garlic and capers in oil in a saucepan, seasoning with salt and pepper.
  • Add the tomatoes and stir.
  • Using a hand blender, carefully puree ingredients together.
  • Add the soy milk, and simmer, blending more until
    desired smoothness.
