Ingredients
5 5 medium potatoes
8 tbs 8 vegan mayo
3 tbs 3 vinegar
1 1 medium onion finely diced
2 2 medium celery stalks thinly chopped
1 1 dash of salt
1 1 dash of ground black pepper
Directions
- Boil the potatoes until they are just soft (you can test this with a fork). Transfer the potatoes to a strainer and cool.
- Once the potatoes have cooled peel or scrub the skin off and chop them into bite-sized pieces.
- Meanwhile, mix together the mayonnaise, vinegar, onion, and celery in a large bowl until smooth.
- Add seasoning with salt and pepper to taste. You can serve immediately, or chill before serving.
