Vegan Potato Salad Recipe


  • 5 5 medium potatoes

  • 8 tbs 8 vegan mayo

  • 3 tbs 3 vinegar

  • 1 1 medium onion finely diced

  • 2 2 medium celery stalks thinly chopped

  • 1 1 dash of salt

  • 1 1 dash of ground black pepper


  • Boil the potatoes until they are just soft (you can test this with a fork). Transfer the potatoes to a strainer and cool.
  • Once the potatoes have cooled peel or scrub the skin off and chop them into bite-sized pieces.
  • Meanwhile, mix together the mayonnaise, vinegar, onion, and celery in a large bowl until smooth.
  • Add seasoning with salt and pepper to taste. You can serve immediately, or chill before serving.
