Minestrone Soup Recipe - A delicious homemade minestrone soup recipe from scratch. It’s easy to make and full of flavor.

Ingredients

  • 120 Grams 4 oz haricot beans

  • 3 pints 3 water

  • 2 2 onions

  • 2 2 cloves garlic

  • 30 grams 30 lean bacon scraps

  • 2 tbsp 2 olive oil, for frying

  • 2 tbsp 2 fresh parsley, chopped

  • 1 tsp 1 dried basil

  • 2 2 large tomatoes, chopped

  • 1 glass 1 red wine

  • 2 2 carrots

  • 1 1 Small turnip

  • 75 grams 75 frozen peas

  • 2 2 large celery sticks, chopped

  • 2 2 small potatoes

  • 150 grams 150 cabbage, shredded (green or white)

  • 2 ounces 2 shaped Italian pasta

  • salt

  • pepper

  • Grated cheese

Directions

  • Soak beans overnight in half a pint of water.
  • Slice the onions grate the garlic and chop the bacon.
  • Heat that oil in a deep pan and fry the onion and bacon for about 10 minutes without browning.
  • Add the garlic, herbs, tomatoes, and wine.
  • Bring to a boil and boil rapidly for 5 minutes to reduce.
  • At the haricot beans and the rest of the water and simmer for two hours.
  • Add the diced carrots, potatoes, turnips, peas, and celery.
  • Cook on low heat for 1 hour. Add the cabbage, and pasta and simmer for 10 to 15 minutes
  • Season the soup and stir in the grated cheese.

Notes

  • Instead of using haricot beans, you can use canned Borlotti beans.
